These days it seems there is a national day of celebration for almost everything: wine, donuts, coffee and even piña coladas. National Piña Colada day falls on July 10, and we are here for it! The essence of summer, sand and sun, piña coladas are a seasonal necessity and truthfully, we will find nearly any excuse to enjoy a drink that comes with a cute little cocktail umbrella. The piña colada originated in San Juan, but if you aren’t able to hop on a plane to Puerto Rico, we found the yummiest recipes to rival the first piña colada ever made by Robert Cofresi (or so the story goes). The pirate is said to have mixed the first piña colada for his crew in the 19th century by combining rum, pineapple and coconut milk. If he can mix a mean summer cocktail so can you, so grab a package of cute cocktail umbrellas (this tropical version from Amazon is so cute) and get to it.
This creamy concoction subs coconut milk for cream of coconut making it frothy and delicious. We love how it is served here in a mason jar and topped off with maraschino cherries. Yum!
This classic recipe contains fresh pineapple and is the perfect frothy frozen drink to keep you cool.
This unique take on the original recipe keeps up with the summer theme by adding blue Curaçao to create a pretty tropical shade.
These layered coladas are not only beautiful, but they also have a coconut purée layer that is rich and flavorful.
This version is sans alcohol, but just as refreshing. Indulge in these mocktails on a weeknight so you can enjoy this beverage without the headache.
